Ingredients
- 1 1/2 cups cooked cannellini beans,drained
- 2 tbsp extra virgin olive oil
- 2 tbsp squeezed lime juice
- 1 clove of garlic, peeled
- 1 tbsp of nam prik pao
- 1/2 tsp sea salt
- 1 tbsp toasted pepitas
- 1 tbsp fresh mint or dill, picked
Directions
- Pulse beans, olive oil, salt, lime juice and garlic in
food processor until smooth. Add 2 tbsp of water
if needed to get desired consistency.. - Dress with a hearty drizzle of nam prik pao.
- Garnish with lightly toasted pepitas and herbs.
- Serve with a crusty loaf of bread, warm pita.
