Ingredients

  • 1 1/2 cups cooked cannellini beans,drained
  • 2 tbsp extra virgin olive oil
  • 2 tbsp squeezed lime juice
  • 1 clove of garlic, peeled
  • 1 tbsp of nam prik pao
  • 1/2 tsp sea salt
  • 1 tbsp toasted pepitas
  • 1 tbsp fresh mint or dill, picked

Directions

  1. Pulse beans, olive oil, salt, lime juice and garlic in
    food processor until smooth. Add 2 tbsp of water
    if needed to get desired consistency..
  2. Dress with a hearty drizzle of nam prik pao.
  3. Garnish with lightly toasted pepitas and herbs.
  4. Serve with a crusty loaf of bread, warm pita.
