Nam Pla Waan is a sweet and savory Thai fish sauce caramel traditionally served with crisp, tart fruit. Pink Salt Kitchens builds its version with fish sauce, sugar, shallots, garlic, palm sugar and white pepper for a bold dipping sauce, glaze and finishing condiment.

Sweet, salty and deeply umami. Fish sauce creates the savory base, sugar gives it a glossy caramel character and white pepper leaves a gentle, lingering bite.
